    ¡Viva España!

    Summer trip to Spain in 2023. Barcelona, Girona, Zaragosa, León, Burgos, Gitaria, San Sebastian. Catalonia, Aragon, Navarre, Castile y León, La Rioja, and Basque Country.

    When the tide receded, it revealed a giant sandbar.
    Le sigh. I'm trying to convince Emily to move here.
    This one came out particularly vivid.
    Torching tomatoes.
    Hand-cut steak about 1.5" thick.
    Then we stopped in at a fish market; since it's a beach town, everything was very fresh.
    I forgot to take a photo before I started in on the cheesecake.

    We arrived at Mimo: Bite the Experience, and were shown to what would later be our kitchen.
    Once we met our instructor, Patricio, he took us to a tiny little ten-seat bar-style tapas joint where they made this incredible Spanish omelet, which they all called a tortilla. We had not ordered Spanish omelets prior to this, thinking they were plain old omelets. And apparently many are, but not this one. It was mouthwateringly delicious.

    All the things we selected at the market. He doesn't know what people will choose, but he worked for five years at a 3-Michelin star restaurant, so he knows what to do with it all.

    A paper towel just strips the peel right off...
    We got a few of these to take with us.
    Your fate is sealed.
    The only choices they gave us for breakfast were: In your room or in the restaurant? Fried or Scrambled? Bacon or no bacon?  We chose all the things.
    Don't help the sewer monster. Passing truck as we walked to the larger city market.

    Add garlic-roasted green beans, charred onions, Iberico ham, olive oil, and some salt crystals. Yum.

    That steak, tho.
    Pan-seared prawns in garlic oil, topped with salt and caviar. Once cracked open, the brains become a sauce. Emily wasn't so thrilled with this preparation, but I liked it.
    We returned to Barcelona by plane, checked in early to the hotel, and walked to an appointment at an ancient Roman-style bath and massage place. After that, we went down to the Barceloneta and ate Bombas, a fried ball of mashed potatoes with spiced beef inside.
