    Summer trip to Spain in 2023. Barcelona, Girona, Zaragosa, León, Burgos, Gitaria, San Sebastian. Catalonia, Aragon, Navarre, Castile y León, La Rioja, and Basque Country.

    The cheesemaker lady basically custom-designed this conveyor system in stages to get where they are today.
    A giant vat of gently heated sheep's milk causes it to coagulate.
    The Quality Control department.
    We went to a sheep cheese - Idiazabal - making facility, Aranburu. This is the sheep's feeding trough.
    These racks, shown being lowered into the brine, hold dozens of cheeses. When they are sufficiently salted, they are floated out into the next room for extraction and cleaning and drying.
    This conveyor took the plastic wheel molds full of compressed curds to a salt bath.
    Properly made, the outer layer will be golden in hue, and the inner portion creamy looking with bacterial bubble flaws. Round bubbles are considered a disqualifier in judging.
    After they dry, they are stored in a dark place to age.
    The little hairs are whey that was forced out by compression. These have just been hosed off to remove mold that builds up on the outside.
    First young plain cheese, then young smoked cheese, then aged plain cheese, then aged smoked cheese, which was by far the best.
    There is a flaw in each wheel, which is removed with a melon baller, and then a label is placed over that spot.
    Stacks of Idiazabal were just lying about everywhere.

    Chardonnay; When the authorities put their approval on Txakoli wine, they allowed up to 15% of the wine to be Chardonnay, so they grow a little of that here also.
    This dog house FTW. We had wondered if the roofs were actually still terra cotta, but this proved they were just colored plastic.
    Walnuts were everywhere on the property.
